Chicken Livers with Onion & Peppers Recipe

Ingredients

• 350g of thinly sliced chicken livers
• 2 teaspoons of dry sherry
• 1 ½ teaspoons of cornstarch
• ¼ cup chicken broth
• 1 tablespoon soy sauce
• Ground pepper

Stir fry Ingredients

• 1 sweet pepper sliced to bite-size pieces
• ½ onion, sliced to bite-sized pieces
• 2 gloves of garlic (minced)
• 1 finger of ginger (crushed)

Method

1. Marinate the liver in sherry wine and cornstarch and set aside for at least 30 – 60 minutes.

2. Heat oil in a large non-stick skillet until hot and then spread the chicken liver without overlapping. Cook for 1 minute until the bottom turns a golden brown and then flip onto the other side, and fry until golden brown. Repeat until you see blood seeping out, then transfer to another pot and set aside.

2. Add oil to the pan, as well as the diced garlic and ginger and fry for a few minutes, before adding the onions. Cook until sauteed.

3. Return the cooked lover to the pan and then add the peppers to it and fry.

4. In another bowl, mix the cornstarch into the chicken broth & soy sauce until it dissolves completely and then pour it into the pan.

5. Stir and cook until the sauce thickens and then turn off the heat.
It is now ready to eat. You can serve over steamed rice as a main dish.

One pro tip is to make sure that you slice your liver thin. If it is too thick, it may take too long to cook and the texture may become hard. Also, make sure that you do not cook the sliced liver too long as it will also become tough.
