2. Lentil One-Pot Stew Recipe
Ingredients
• 200g dried brown lentils
• 1 ½ tbsp chopped rosemary
• 2 large roughly chopped onions
• 4 garlic cloves
• 2 tbsp vegetable powder
• 2 celery sticks
• 4 large potatoes cut in chunks
• 2 large carrots (chopped)
Optional: Tumeric and cumin powder
Method
1. Boil the lentils for 10 minutes.
2. Add the rosemary to it, cover with a lid and then let simmer for 20 mins.
3. Heat oil in a large pan and then fry the onions and garlic until sautéed. Add the spices to it.
4. Stir in the lentils and then vegetable stock powder, and then add the celery, potatoes and carrots.
5. Cover and cook for 20 mins, stirring often until the lentils and vegetables are tender.
Serve into bowls and volia – your Iron-rich lentil soup is ready to enjoy!
